There are a few guiding principles that drive what's happening at Chomp. We love beef, of course, but not just any old beef: quality and provenance are crucial. If it wasn't treated right on and off the farm then chances are it wont be any good. The same goes for the rest of our ingredients too - compromising on quality is a slippery slope that we don't want to end up at the bottom of. Simplicity is key.

We serve two types of baguette filled with meat from locally sourced baby back pork ribs. The ribs are cooked sous vide in our kitchen then are finished and glazed on the barbecue on-site before the meat is stripped from the bone for the sandwiches. 1) Banh Mi: The classic Vietnamese street sandwich. Char siu marinaded pork served in a hollowed baguette with fresh red chilli, cucumber, fresh coriander and do chua pickle made from daikon (mouli) and carrot. 2) Memphis Barbecue Baguette: Baby back pork marinaded with a Memphis style dry rub served with a lemon and wholegrain mustard coleslaw and one of our own Memphis style barbecue sauces; 'Barbecue', 'Hot' and 'Don't be so silly' (as the name suggests this is seriously hot).
