The Taquito Banditos are on a mission to bring real Mexican street food to the streets of Britain. We first found Taquitos sold from a food truck in Santa Monica in 2010. It was love at first bite. First we ate, then we learned and now we make our own using thin pressed tortillas which we fill with plenty of beef, chicken and vegetables from farmers and suppliers that we know personally, most within 20 miles of our kitchen. We mix the meat and veggies with fire roasted salsas (we get the jalapenos, habaneros, cactus and chipotle peppers from Adriana Martinez, who’s small family farm is in the Sinaloa valley in Mexico), then we dip them in a lightly spiced batter before frying until crisp and gold. We serve them two ways: Taquitos: just as they are – crispy, hot and very very tasty. Enchiladas: with Mexican rice, Lime slaw, Fire Roasted Salsa, Yoghurt and seeds.

Here at Park Farm, my family have been happily milking a herd of cows for three generations. A few years ago we thought we would try making cheese. The cheese is made in the same buildings in which my grandmother made her cheddar. The cows are just a few hundred yards away.
